Chef / Culinary Arts Courses:
Bachelor of Catering Technology & Culinary Arts:Duration: 3 years
The core of curriculum in Bachelor of Catering Technology & Culinary Arts (BCT & CA) offers the most intensive and complete training in classic techniques of professional cooking. Our Curriculum is the hands on instruction of basic cooking, baking and presentation skills and the theoretical knowledge that must underline competency.
The objective is to teach the students what works in both the front and the back of the house along with the reasons it works. The course structure is divided into one year and four Semesters
Post Graduate Diploma in Culinary Arts:
PGDCA is the result of the collective thought of highly respected, culinary experts with years of academic and professional expertise. The combination of skill development, leadership and entrepreneurship have been strategically embedded into the curriculum keeping in mind the local requirement but with a global touch.
The course extends over a period of two semesters of 16 weeks each (one year) and will have equal emphasis on theoretical and practical inputs. The course is well designed and targeted to make you a thorough professional by not only teaching you practical skills but also will make you an effective leader in a very challenging occupation.
1.5 Year Certificate Course in Food Production & Patisserie
The Craft Certificate Course in Food Production and Patisserie is designed to cater to this demand for entry-level positions where in the trained student can join as a cook trainee in a professional kitchen.
Students who successfully complete one year of college and six months of Industrial Exposure Training will have a solid understanding and mastery of basic principles and techniques of food production and will definitely give him an edge to excel from where he/she starts.
Diploma in Cruise Galley Operations / Costa Cruise Chef Preparatory Course:
Candidates holding a degree / diploma in Hotel Management with a passion for cooking food will be given advanced inputs as cruise Chef. Hands on practical exposure will also be provided where the candidate will be trained on the corporate menu cycles as followed by Costa Crociere onboard their ships.
On successful certification, candidates will be absorbed at 2nd Cook level with a transparent career path and offered placement in any of the 10 cruise ships of Costa Crociere sailing all around the world.
