1 Month Gourmet Program (80 hours)
Course Structure: 4 weeks, with 4 hours of hands-on classes each day, 5 days per week. All your weekends are free.

For beginners or culinary professionals wishing to learn or improve their knowledge in French Cooking or Pastry, this short program is taught at a 1 Michelin star level.

Our teachers will provide you with many tips and lots of advice in order to help you to develop professionally and learn new skills.

Course Content: 

Cooking Course (1 Module)
1st Week: Cold Starters, 2nd Week: Hot Starters, 3rd Week: Fish dishes, 4th Week: Meat dishes
OR
Pastry Course (1 Module)
1st Week: Breads, Viennoiseries, Doughs, 2nd Week: Cakes and Entremets, 3rd Week: Chocolates, 4th Week: Plated Desserts and Decoration

Students work in team of two to help each other. Our main objective is to ensure that you learn a lot of recipes and enjoy your time with us in Miami.

Further Culinary Programs:
• 1 week / 2 week Discovery Program (20 / 40 hours)
• 2 Month Epicure Program (160 hours)
• 3 Month Gastronomic Program (consists of the Epicure program + 4 weeks of teaching at Level III)

Students in these courses choose a Cooking or Pastry module.

1-Year Special Miami / South of France Cooking Program:
- 3 months study in Miami + 3 months study in the South of France + 6 months internship in France
