Position SummaryThe AM Cook is responsible for preparing all menu items and prep work across all back‑of‑house stations, ensuring that Diamond Back’s standards for quality, flavor, and presentation are consistently met. This position requires strong attention to detail, excellent time management, and teamwork to support a smooth transition from prep to lunch and dinner service.
Key Responsibilities- Execute daily prep lists for all kitchen stations, including grill, sauté, fry, sushi, and dessert.
- Maintain consistency and quality according to Diamond Back’s recipes, plating standards, and portion guidelines.
- Properly label, date, rotate, and store all ingredients following HACCP and food‑safety procedures.
- Set up and break down prep and line stations efficiently and with attention to cleanliness.
- Assist in receiving and inspecting product deliveries for quality, accuracy, and freshness.
- Communicate clearly and professionally with chefs, fellow cooks, and dish team to ensure smooth workflow.
- Uphold Diamond Back’s standards of appearance, professionalism, and hospitality in all back‑of‑house interactions.
- Support culinary leadership in special prep projects, features, banquets, and private dining events as assigned.
- Maintain equipment and report any maintenance or safety concerns promptly.
- Minimum 1–2 years of kitchen experience preferred; fine dining or steakhouse experience is a plus.
- Knowledge of proper food handling, sanitation, and knife skills required.
- Ability to work in a fast‑paced, high‑volume kitchen while maintaining accuracy and attention to detail.
- Must be reliable, punctual, and maintain a positive attitude.
- Must be available for early morning shifts and occasional weekends or holidays.
- Ability to stand, walk, bend, and lift up to 50 lbs for extended periods.
- Comfortable working in a high‑heat, fast‑paced environment.
