Overview
Traveling Executive Chef, Birmingham, AL. Morrison Healthcare, a leading national food and nutrition services company, seeks a Traveling Executive Chef to oversee kitchen operations across multiple accounts while maintaining a safe and sanitary work environment and ensuring meals are prepared in accordance with corporate programs and guidelines.
Key Responsibilities- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning and presentation standards; complete and utilize daily production worksheets and waste log sheets; taste completed meals to ensure quality
- Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation per company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas; ensure staff follow and complete schedules
- Maintain inventory of food and non-food supplies within guidelines; ensure necessary products are available when needed
- Make decisions on utilization of leftover food products within company guidelines
- Comply with federal, state and local health and sanitation regulations and department sanitation procedures as evidenced by health department and third-party audits
- Follow facility, department and company safety policies and procedures, including occurrence reporting
- Participate in departmental meetings, staff development and professional programs as appropriate
Preferred Qualifications
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience, depending on formal degree or training
- Extensive catering experience is a plus
- High-volume, complex food service operations experience is highly desirable
- Institutional and batch cooking experience
- Hands-on chef experience required
- Knowledge of food and catering trends with focus on quality, production, sanitation, food cost controls and presentation
- Computer literacy, including Microsoft Office (Word, Excel, PowerPoint), Outlook, e-mail and Internet
- Willingness to participate in client satisfaction programs/activities
- Serv Safe certification is highly desirable
