Lead Kitchen Steward at Desert Diamond Casinos & Entertainment

Under direct supervision of the Room Chef and F&B Back of the House Intern, leads the kitchen stewarding operations and staff across the main kitchen, all venues, bake shop, and employee dining room. Responsibilities include dishroom operations, cleaning and maintenance, banquet plating, food running, and managing team schedules.

Responsible for cleanliness and sanitation in all food production areas, ensuring all outlets have sufficient equipment and that sanitation and health standards are met. Oversees all stewarding and kitchen maintenance operations on the assigned shift and venue.

Essential Duties & Responsibilities
  • Ensure compliance with all TOGE policies and procedures, including Internal Controls.
  • Lead stewarding functions in all kitchen areas, promote overall cleanliness and compliance with state and local health regulations.
  • Train Kitchen Stewards on safety and sanitation issues.
  • Ensure kitchen equipment is prepared and operational and coordinate preventive maintenance.
  • Communicate needs to supervisors to maintain par stocks of materials and equipment.
  • Promote teamwork and quality service through daily coordination with Food & Beverage Leadership and other departments.
  • Assist with other duties as needed, including food dish‑up and set‑ups.
  • Attend training meetings and provide coaching, guidance, and direction to Kitchen Stewards.
  • Monitor performance and support on‑brand service behaviors to ensure guest satisfaction.
  • Provide information to subordinates via telephone, e‑mail, or in person.
  • Work toward performance and team goals set by the Room Chef and F&B Back of the House Intern.
  • Encourage mutual trust, respect, and cooperation among team members.
  • Understand Kitchen Steward positions to cover for absences and fill gaps.
  • Ensure team members are treated fairly and equitably.
  • Maintain compliance with food handling and sanitation standards and proper handling and temperature standards.
  • Communicate and assist team members to understand guest needs.
  • Lead and train Kitchen Stewards in maintenance of kitchen equipment, sanitation, organization, and cleaning.
  • Demonstrate new techniques and equipment to team members.
  • Demonstrate Desert Diamond Casino “On Brand” attitude toward team members and guests.
  • Support and reinforce Desert Diamond Casino’s Spirit of Service Standards.
  • Model Enterprise standards and lead by example.
Job Requirements

Minimum Qualifications

High School Diploma or GED; plus three (3) years of steward/kitchen experience. Experience in a large, multi‑outlet casino, hotel, or resort is preferred. Must be 18 years of age or older, able to pass a pre‑employment drug/alcohol screen and background investigation, and obtain and maintain a gaming license.

Knowledge, Abilities, Skills, and Certifications
  • Lead a diverse and demanding multilingual workforce.
  • Maintain and care for culinary facilities, equipment, supplies, and materials.
  • Apply FDA health code in daily practice.
  • Apply cleaning and sanitation best practices for hotels and restaurants.
  • Use scheduling techniques to control labor costs.
  • Obtain a Food Handlers card.
  • Obtain TIPS certification.
  • Oversee multiple venues with varied styles and requirements.
  • Maintain open and positive communication with Food & Beverage Leadership and other departments.
  • Maintain quality control and safety standards.
  • Communicate effectively in English, verbally and written.
  • Work in a busy, fast‑paced environment while maintaining a professional appearance.
  • Work well under pressure and make decisions in high‑stress situations.
  • Have basic computer skills, including Microsoft Office.
Physical Demands

Regular standing, walking, and lifting up to 50 pounds. Occasional sitting, stooping, kneeling, crouching, or crawling. Must tolerate heat, fumes, steam, second‑hand smoke, and a high noise level. Evening, graveyard, holiday, and weekend work required. Extended hours and irregular shifts may occur.
