The Vision:High-End Brasserie & Open-Fire Gastronomy
All4chefs is exclusively representing a landmark eco-luxury retreat situated at 2,100 meters. This architectural marvel is seeking a Chef de Cuisine to redefine its culinary identity.
This is not a "rigid fine dining" role. We are looking for a chef to lead a high-end brasserie concept that is lively, generous, and focused on pure, readable flavours. The kitchen follows a "Slow Food" philosophy
, emphasizing respect for the product and the timing of nature.
Key Culinary Elements:
Live Cooking: Expert use of open-fire, embers, and flames to elevate ingredients.
100% Homemade: A commitment to scratch-made excellence across breakfast, high-volume lunch, and elegant dinners.
Local Terroir: Leveraging short supply chains and deep relationships with Valaisan producers.
Business Context: You will oversee a high-performing operation with a winter F&B revenue of CHF 1.2M and a growing summer MICE/Events segment currently generating over CHF 850K in corporate and private events.
RequirementsWe are looking for a "human-first" leader
. This property strictly rejects "old-school" toxic management.
No Ego: A clear vision paired with an accessible, committed, and hands-on presence in the kitchen.
Modern Management: A style rooted in respect and emotional intelligence—no shouting, no humiliation, and no fear-based tactics.
Team Builder: Ability to unite, train, and retain a brigade of 8 to 12 professionals depending on the season.
Front-of-House Synergy: You believe in working hand-in-hand with the service team to ensure a seamless guest experience.
Profile RequirementsLanguages:
English is mandatory. Fluency in French or Italian is a strong advantage.
Experience: Solid seasonal luxury hospitality experience. You must be comfortable managing variable volumes, from intimate individual dinners to large-scale MICE groups.
Resilience: The property is located at 2,100 meters
, requiring above-average adaptability and physical/mental resilience to manage high-altitude logistics and seasonal peaks.
Sensitivity: A deep affinity for the mountains, nature, and the "living" aspect of cuisine.
Estimated Net Monthly (Valais): €6,060+ (CHF 5,650+) (Based on a single person after all Swiss mandatory taxes and social contributions).
Benefits & Exceptional Working ConditionsAccommodation: Studio apartment provided for CHF 850/month in winter (limited availability) or dedicated assistance finding resort housing (CHF 800–1,200).
Lifestyle: Full Crans-Montana Gondola & Ski Pass provided for the duration of your contract.
Work-Life Balance: 35 days of contractual leave. Extra working hours result in additional days off.
Schedule: 6 working days / 1 off (moving to 5/2 once the team is complete).
Perks: 50% discount for you and your family at the restaurant and hotel; daily on-site meals for CHF 10.
Commute: Transport provided via company vehicle or gondola (20–35 min).
