Overview

Mimi’s Chūka Diner – Line Cook/Counter Associate. Mimi’s Chūka Diner is an owner-operated full-service restaurant in Somerville, located within the same building as Aeronaut Brewing Company’s taproom. We serve Japanese-adapted Chinese cuisine with an American diner influence in a cozy ~38-seat dining room. We hire for character and attitude, and we want all team members to reflect those values.

Who We Are Looking For

We’re looking for a reliable, detail-oriented Line Cook to join our back-of-house team. You’ll be responsible for preparing ingredients, executing dishes according to spec, and keeping a clean, organized station throughout service. This role offers growth potential with opportunities for involvement in special events and increased responsibilities over time.

Reports To: Chef / Kitchen Leads

Roles & Responsibilities Operations & Organization
  • Set up and stock stations with all necessary ingredients, smallwares, and supplies
  • Follow all food safety and sanitation standards
  • Maintain a clean, organized, and safe work environment
  • Communicate clearly and respectfully with team members
  • Participate in cleaning and closing duties as assigned to exact specifications in a timely manner
  • Prep dishes according to recipes and the restaurant’s standards
  • Carefully prepare and plate dishes according to the restaurant’s standards
  • Ensure proper food storage and handling by following health codes and restaurant SOPs (e.g., transferring food to the smallest container when repacking and consolidating prep items, ensuring proper cooling of proteins, stocks, and sauces, enforcement of proper protein storage in refrigerated units)
  • Assist in putting away daily deliveries, unpacking and product organization in accordance with restaurant and health code requirements
  • Assist in maintaining and tracking inventory of walk-in and suite freezers to ensure necessary items are ordered and stocked
  • Assist in maintaining janitorial supply inventory and ensure timely restocking
  • Assist customers at the front-counter when needed, including taking and expediting orders
  • Assist in daily and weekly cleaning tasks as assigned by leads and chefs
Communication & Team Leadership
  • Communicate any low or 86’d items/ingredients to the AM or PM lead or to the chef when applicable
  • Identify and communicate any deficiencies in quality of ingredients, prepped items, equipment, and smallwares
Qualifications & Requirements
  • Experience working in a professional kitchen
  • Strong organizational skills and ability to manage multiple priorities
  • Excellent communication skills and ability to work collaboratively with ownership and staff
  • Knowledge of general food safety regulations and a commitment to maintaining compliance
  • Interest in growth opportunities, including involvement in special/offsite events
Physical Requirements
  • Ability to stand for extended periods and remain on your feet for up to 8 hours per shift
  • Ability to lift up to 50 lbs, move equipment, and reach overhead shelving
  • Comfortable working in a kitchen environment with exposure to heat and cleaning solutions
Compensation & Benefits
  • Base hourly wage + counter tip pool share – $18-22/hr
  • Health & dental insurance available – 50% coverage after 60 days (~$2,800/year)
