Job Description | Assistant Manager - Employed Position

Hours:

40 hours per week. This is a leadership role, and flexibility is required, including evenings, weekends, and busy trading periods. Time off in lieu will be provided where appropriate

Salary / Pay: £30,000 DOE, plus participation in the tronc scheme (details discussed at interview)

Opening February 2026 on Ecclesall Road, The Gillmont is a Champagne and cocktail bar from the team behind Gills & Co.

Inspired by classic hotel bars, it will offer an effortlessly elegant space for coffee, timeless hotel‑bar favourites such as afternoon tea and a Club sandwich, cocktails and Champagne - designed for celebrating life’s moments, big and small.

Reporting to the General Manager, as Assistant Manager, you’ll play a vital role in supporting the GM with the day‑to‑day running of the venue. You’ll be a hands‑on leader during service, helping to uphold standards, motivate the team, and ensure every guest has a memorable experience.

This role is ideal for someone looking to take the next step in their hospitality career, with opportunities to develop towards senior management over time.

What We’re Looking For
  • Previous experience in a supervisory or assistant management role within hospitality
  • Strong working knowledge of cocktail making
  • Strong leadership skills with a hands‑on, lead‑by‑example approach
  • Excellent communication and organisational skills
  • A solid understanding of bar operations and delivering outstanding service
  • Calm, professional, and confident under pressure
  • Passion for Champagne, cocktails, and delivering memorable hospitality
  • Willingness to learn business, financial, and people‑management skills
  • Not essential, but having a WSET level 2+ award in wine and spirits is advantageous
What You’ll Be Doing Operational Support & Leadership
  • Support the General Manager in the smooth day‑to‑day running of the venue
  • Lead shifts confidently, acting as the senior point of contact when required and escalating to the General Manager where appropriate
  • Help train, motivate, and develop the bar team
  • Ensure high standards of service, cleanliness, and presentation are upheld at all times
  • Assist with rota management and ensure strong coverage during service
  • Support the preparation and presentation of afternoon tea bookings
  • Help oversee opening and closing procedures
Guest Experience
  • Be present and engaged on the floor, delivering warm and knowledgeable service
  • Build rapport with regulars and first‑time guests alike
  • Handle guest feedback and minor complaints professionally, escalating when needed
  • Lead pre‑shift briefs when required and reinforce service standards
  • Encourage guests to leave Google and Trip Advisor reviews
Business & Stock Support
  • Assist with stock control, ordering, and stock rotation
  • Help monitor wastage and report discrepancies
  • Support cash handling procedures and end‑of‑day checks
  • Assist with event delivery and bookings when required
Health & Safety
  • Ensure all health & safety procedures are followed during service, with support from the management team
  • Complete daily checks and maintain a safe environment for guests and staff
  • Report maintenance or safety issues promptly
Development & Progression
  • Work closely with the General Manager as a mentor, receiving regular feedback and development support
  • Spirit and wine training (WSET Courses)
  • Gain exposure to KPIs, stock control, team management, and business performance
