This is a remote, boat‑in position located in Kenai Fjords National Park, with responsibilities across multiple departments. The Sous Chef coordinates activities for the Kenai Fjords Wilderness Lodge and Day Lodge, overseeing operations in the Executive Chef’s absence or as directed.

Major Activities (Typical Duties/Responsibilities)
  • Provide excellent customer service to guests and other team members.
  • Make sound judgments and anticipate issues and opportunities.
  • Handle comments, complaints, and concerns efficiently.
  • Work closely with all departments to ensure guest satisfaction.
  • Ensure guests’ special needs are met.
  • Greet arriving and departing guests professionally.
  • Know daily lodge functions to answer guests’ questions.
  • Assist in menu planning for all meals, including options for special dietary needs and cost management.
  • Primarily responsible for preparing, cooking, and cleaning after all meals, including washing dishes.
  • Build and maintain a positive guest relationship.
  • Coordinate with supply teams to order, receive, store, and inventory supplies for guest satisfaction, safety, and cost control.
  • Maintain clean and sanitary food preparation facilities in compliance with health regulations.
  • Coordinate ordering, special island events, scheduling, staffing, and safety training to enhance teamwork and customer experience.
  • Collaborate with the island Maintenance Team on periodic and special projects for safety and cleanliness.
  • Work with Seward‑based managers to ensure island readiness and consistent standards.
  • Perform opening and closing duties, staff meal coordination, day‑lodge support, ordering materials, and other tasks.
  • Plan menus and utilize food surpluses and leftovers, considering guest numbers and market conditions.
  • Estimate food consumption and purchase requisitions for foodstuffs and supplies.
  • Supervise kitchen personnel and coordinate assignments for economical and timely production.
  • Observe food preparation methods, portion sizing, and garnishing for consistency.
  • Arrive to work on time, ready to work, dressed in clean uniform, with a neat appearance.
  • Familiarize new staff with kitchen practices and assist in continuous training.
  • Participate in emergency response activities, including firefighting, emergency medical activities within training limits, and other incidents.
  • Other duties as assigned.
What skills and experience do you need for this job?
  • Current CPR and First Aid.
  • Training for Alcohol Professionals (TAPs) certification.
  • Serv Safe Food Protection Manager certificate preferred.
  • Knowledge of food handling and preparation standards.
  • Strong communication and interpersonal skills.
  • Culinary School graduate or previous experience as a cook or supervisor in food service operations, or equivalent combination of experience and training.

The starting wage for this role is $26.00/hour.
