As we continue to grow our footprint with our new facility in Salt Lake City, Utah, we’re looking for a passionate and skilled R&D Specialist – Baker (Bread & Laminated Dough) who thrives at the intersection of artisan craftsmanship and industrial precision.
This is a hands‑on role for someone who lives and breathes bakery innovation — from hand‑laminating croissants in the lab to scaling new products on state‑of‑the‑art industrial lines.
What You’ll Do- Create & Innovate:
Develop new bakery concepts (croissants, breads, and laminated doughs) from artisanal beginnings to full industrial scale. - Bridge Art & Industry: Apply traditional baking know‑how while adapting recipes and techniques for modern, automated production lines.
- Collaborate Across Teams:
Partner closely with colleagues in Finance, Purchasing, Quality, and Operations to bring projects to life — balancing cost, taste, and texture expectations. - Stay Ahead of Trends:
Explore new baking styles, ingredients, and processes to keep Bridor at the forefront of bakery innovation. - Document & Share:
Lead tasting sessions, evaluate results, and communicate your findings clearly with photos and reports. - Support Launches:
Assist during scale‑up and industrial trials, ensuring every new product meets our high standards for quality and consistency.
- Diploma from a recognized baking or pastry school.
- Minimum 5 years of experience in baking, product development, or food manufacturing.
- Expertise in artisanal techniques for breads and laminated doughs (croissants, puff pastry, etc.).
- Experience with industrial bakery lines is an asset.
- Passionate about bakery craftsmanship and innovation.
- Methodical, curious, and creative problem‑solver.
- Strong interpersonal and teamwork skills with the ability to work cross‑functionally.
- Background in food ingredients or related fields (yeast, flour, chocolate, fillings) preferred.
- Familiarity with sensory evaluation and product tasting processes.
- Understanding of Canadian and U.S. food regulations (CFIA, Health Canada, FDA, USDA).
- Knowledge of HACCP, GMP, and BRC standards.
- Based in Salt Lake City, Utah.
- Primarily day shift; flexibility may be required.
- Travel within the U.S. and occasional trips to Canada.
