Position: Corrections Food Service Coordinator (Salem)

Overview

Corrections Food Service Coordinator (Salem) at Santiam Correctional Institution (SCI), Salem, Oregon. The Oregon Department of Corrections currently has one opening. All qualified and interested candidates are encouraged to apply.

The Corrections Food Service Coordinator coordinates, instructs, and directs Adults in Custody (AIC) in the production and serving of meals and participates in the preparation of large volume cooking in a corrections institution setting. These positions are represented by AFSCME and may be eligible for Police & Fire (P&F) benefits through PERS, as defined by statute.

Responsibilities
  • Coordinate, instruct, and direct AICs in the production and serving of meals; participate in large-volume cooking in a corrections institution setting.
  • Direct AIC work crews to enforce job-related rules, policies, procedures, and security guidelines; maintain discipline and order.
  • Instruct and train AICs on work techniques and procedures for safe, sanitary, and efficient food preparation and service.
  • Assign AIC work and evaluate work performance for training and assignment purposes; may interview and recommend crews.
  • Conduct searches of AICs and areas to ensure absence of contraband; check and sign AIC time cards; monitor area cleanliness and sanitation.
  • Coordinate sanitation efforts and supervise food preparation tasks including measuring, mixing, cooking, and serving according to menus and standardized recipes; adjust recipes for larger quantities to control waste.
  • Plan cooking schedules to have food ready at serving time and monitor special diets (e.g., low sodium or religious diets).
  • Direct activities related to requisition of supplies, inventory, and storage of food products and equipment.
  • Maintain records of food prepared, served, leftover, and time worked by AICs.
  • Work in correctional institutions and enforce security procedures, including searches for contraband.
Qualifications
  • A high school diploma/GED or higher, and one year of experience in a commercial food service facility, full-service restaurant, or related setting; OR
  • An associate's degree in Food Service Management, Foods and Hospitality Service, or a directly-related field.
  • Must obtain a Food Handlers Permit within 30 days of hire.
Requested Skills
  • Team/crew management of 30+ individuals
  • Experience managing, supervising, and/or leading a kitchen (restaurant, school cafeteria, military dining, government, or private food establishment)
  • Experience cooking a variety of foods (vegetables, desserts, breads, entrees, etc.)
  • Knowledge of progressive cooking to minimize food waste and cook-to-serve concepts
  • Knowledge of food safety temperatures and sanitation procedures
  • Ability to instruct crews in maintaining high sanitation standards
  • Ability to maintain order while fostering a positive work environment
  • Ability to follow security operational procedures
  • Serv Safe Food Protection Manager Certificate
  • Basic computer skills
