What You’ll Do:As an Assistant Manager, you’ll be a key member of the nightly production team. Ensuring sushi is rolled, packaged, and loaded for delivery on schedule. You’ll uphold food safety and quality standards throughout each step and serve as the nightly delivery driver, completing a single-stop route to our local distributor (7 miles away) safely and on time.
Responsibilities:- Support nightly production operations, including roll assembly, cutting, packaging, labelling, and outbound order staging.
- Verify completion and accuracy of rice pH, temperature, and sanitation logs.
- Ensure all production and packaging activities are performed in accordance with established food safety, sanitation, and quality standards.
- Oversee nightly cooler loading, delivery preparation, and staging for United Produce.
- Drive company box truck for nightly delivery (~6–7 miles, 15–20 minutes) from commissary to local distributor.
- Ensure all coolers are loaded, secured, and transported according to cold chain and food safety requirements.
- Conduct pre- and post-trip vehicle inspections; maintain cleanliness, mileage, and maintenance logs.
- Step in for the Production Manager during absences or peak periods.
- Promote a positive, safety-first culture rooted in teamwork and accountability.
- 2+ years of experience in sushi, food manufacturing, or commissary operations, with at least 1 year in a lead or supervisory role.
- Serv Safe Manager certification and Missouri Seafood HACCP certification (or willingness to obtain).
- Comfortable driving at night and working late shifts as part of daily delivery operations.
- Valid driver’s license with clean MVR and ability to operate a box truck with lift gate (non-CDL).
- Ability to lift up to 50 lbs and stand for extended periods.
- Fluent in English (verbal and written).
- Experience with refrigerated or food delivery routes.
- Familiarity with Suzumo sushi machines and BOHA labeling systems.
- Knowledge of ready-to-eat (RTE) manufacturing.
- Experience with FDA documentation in a production line.
- Experience recording production metrics such as yield, waste, and throughput.
