Opening in March 2026 in the heart of downtown Sacramento, Aiona is a bold new culinary destination celebrating the vibrant traditions of Mediterranean cuisine through the ancient art of wood-fired cooking. Featuring an open kitchen, a 3,000-bottle wine cellar curated by an Advanced Sommelier, and refined indoor and outdoor dining spaces, Aiona offers an immersive, upscale experience unlike anything else in the city.

Aiona is seeking a confident, service-driven PM Front of the House Manager to join our opening leadership team. This role is responsible for leading evening service, ensuring exceptional guest experiences, and supporting the development of a polished, high-performing front-of-house team.
The PM FOH Manager will be a visible leader during dinner service, setting the tone for hospitality, professionalism, and execution while upholding Aiona’s service standards and culture.
Key Responsibilities- Service & Guest
Experience:
Lead and manage all front-of-house operations during PM service - Ensure smooth, efficient, and elevated dinner service execution
- Actively engage with guests, resolve concerns, and execute service recovery with care
- Uphold and model Aiona’s hospitality standards and brand values
- Partner closely with the culinary and beverage teams to deliver seamless service
- Team Leadership & Development:
Supervise FOH supervisors and hourly team members during PM shifts - Coach, motivate, and provide real-time feedback to staff
- Support training, onboarding, and ongoing development of FOH team members
- Help maintain a positive, inclusive, and accountable work environment
- Enforce policies, procedures, and standards consistently and fairly
- Operations & Systems:
Execute floor plans, reservations, and table management effectively - Monitor pacing, staffing levels, and guest flow throughout service
- Ensure cleanliness, organization, and readiness of all FOH areas
- Assist with cash handling, checkout procedures, and nightly reporting
- Ensure compliance with health, safety, labor, and alcohol regulations
- Collaboration & Communication:
Communicate clearly with BOH, bar, and leadership teams during service - Participate in pre-shift meetings and post-shift recaps
- Share feedback and observations with AGM and GM to support continuous improvement
- 3+ years of restaurant management or supervisory experience, preferably in an upscale or high-volume environment
- Strong floor leadership skills and a passion for hospitality
- Excellent communication, organization, and problem-solving abilities
- Experience with POS and reservation systems (Toast and Open Table a plus)
- Ability to thrive in a fast-paced, opening-team environment
- Flexible availability, including evenings, weekends, and holidays
- Wine knowledge or interest in learning is a plus; sommelier experience welcome but not required
