Dietary Aide HCC – Pruitt Health

Job Purpose: Assists with food preparation in accordance with established procedural guidelines, and as may be directed by the Dietary Manager or supervisor. Follows facility procedure for storing, serving and transporting food and supplies. Responsible for cleaning, sanitizing and proper maintenance of equipment.

Key Responsibilities
  • Follow diet orders and NPO diet orders.
  • Assist cook in preparing meals, desserts and/or snacks for patients/residents; e.g., salads and desserts and other dishes.
  • Use proper food handling processes, procedures and policies.
  • Deliver trays to patients/residents on halls.
  • Serve meals to patients/residents in dining area (food and beverages).
  • Prepare between-meal nourishments (make sandwiches, etc.) and serve in accordance with procedural guidelines.
  • Offer menu substitutions and record them in accordance with procedural guidelines.
  • Follow procedures for serving partner meals.
  • Communicate well with patients/residents/clients and family members, providing warm and friendly greeting and an approachable attitude, and respond to expressed concerns while displaying a helpful, caring demeanor. Provide answers when appropriate in a professional manner.
Knowledge, Skills, Abilities
  • Clean tables in the dining area after each meal.
  • Clean work area at the end of shift and after meals, including sweeping and mopping.
  • Remove garbage from kitchen areas and hose out garbage containers.
  • Comply with infection control policies in the work area.
  • Scrape dishes, wash dishes, pots and pans.
  • Record freezer and walk-in refrigerator temperatures in accordance with established procedures.
  • Check stock as needed and store in an appropriate manner according to facility guidelines.
  • Store cleaning material appropriately.
  • Set up tray line and perform tray line service.
  • Properly store leftovers/opened food.
  • Make coffee/tea as requested.
  • Clean kitchen equipment such as carts, tables, counters, ice machine, buckets, blender, mixer, meat slicer, freezer, refrigerator, stove, steamer, garbage disposal, dish machine coffee/tea maker, steam table, etc.
  • Operate the coffee & tea maker, dish machine, garbage disposal, mixer, blender, meat slicer and steamer.
  • Follow standardized recipes.
  • Use serving equipment (ladle, spoon, scoops, etc.).
  • Check and record water temperature (dishwasher, etc.).
  • Check dishwasher with sanitizer strips.
  • Check chemical levels and replace if needed.
  • Participate in center/agency surveys (Licensure / JCAHO) and any subsequently required reports.
  • Attend and participate in continuing educational programs to keep abreast of changes in your field as well as to maintain current license/certification, as required.
  • Attend and participate in mandatory in-services.
  • Honor patients/residents’ rights to fair and equitable treatment, self-determination, individuality, privacy, property and civil rights, including the right to wage complaints.
  • Comply with corporate compliance program.
  • Report job-related functions/tasks that involve occupational hazards including exposure to blood and body fluids and others as necessary.
  • Follow established safety regulations, including fire protection & prevention, smoking regulations, infection control, etc.
  • Follow established safety procedures when performing tasks and/or working with equipment.
Minimum Education Required

Sufficient education to demonstrate functional literacy.

Minimum Experience Required

No prior experience required; on-the-job training provided.

Additional Qualifications (Preferred)

Previous food service and/or food preparation experience preferred; long-term care dietary experience preferred.
