Essential Duties and Responsibilities
  • Guide daily execution of the production schedule through delegation and time management at the direction of the Cake Production Supervisor and the Cake & Specialty product Manager. Production schedules are subject to the demands of mail order, retail, and other seasonal demands.
  • Work with and train members of the team building, icing and decorating cakes as well as making all products in the cake department for retail and mail order products according to the standard operating procedures set forth by O&H Management, as well as quality checking the cakes and other duties requested by the Cake Production Supervisor and Cake & Specialty product Manager.
  • Support Cake Production Manager in maintaining proper storage of materials and adequate levels of inventory for production requirements.
  • Assist the Cake Manager with training and development, and performance management of Cake Production. Must ensure all team members are trained and practicing GMPs and are SQF and HACCP compliant.
  • Develop a sound understanding of GMPs, SQF, HACCP, and OSHA. Maintain SOPs (Standard Operating Procedures) for all processes / equipment, ensuring compliance.
  • Oversee and assist with the completion of daily reports and paperwork required to satisfy SQF requirements.
  • Providing seasonal support and guidance to retail and production teams for preparation, baking, decoration, and packaging of seasonal items and products. This includes assisting in the planning, completion, and shipping of all non-kringle mail order items, Christmas cookies, and marzipan.
  • Evaluate and encourage employee development through continuous on‑the‑job training. Provide feedback to the Cake Production Supervisor and Cake & Specialty product Manager.
  • Provide feedback and assist with other team members’ annual performance reviews and corrective action as needed.
  • Maintaining employee safety and morale by creating a safe working and efficient working environment.
  • Other duties as assigned by management.
Education And Experience
  • High School diploma, GED or equivalent required
  • 5+ years related experience in a food production leadership role. Including experience in cake construction and cake decorating.
  • SQF and HACCP Experience preferred
