The Deli Production Clerk supports the deli team by preparing, packaging, and stocking a wide variety of food products, including salads, side dishes, sandwiches, and ready-to-eat meals. This role ensures that all products are made to company standards, labeled accurately, and displayed attractively while following food safety and sanitation guidelines. The Food Production Clerk contributes to a positive guest experience by maintaining quality, freshness, and presentation of deli products.

Primary

Position Duties
  • Prepare and portion deli food items such as salads, sandwiches, side dishes, and ready-to-eat meals.
  • Follow recipes, portion control, and product specifications consistently.
  • Properly package, label, and date products for display and sale.
  • Stock and rotate deli cases, ensuring products are fresh and appealing.
  • Monitor product levels and communicate needs for production or restocking.
  • Maintain clean, organized, and sanitary workstations, utensils, and equipment.
  • Follow all food safety, health, and sanitation guidelines.
  • Provide assistance to guests when needed, offering friendly and helpful service.
  • Support deli team members with additional duties as assigned.
Guest Service
  • Greet and assist guests in a friendly and courteous manner.
  • Provide knowledgeable answers to guest inquiries.
  • Promote a high level of morale within department and store, utilizing friendly but professional methods of honest and open communication with guests and team members.
  • Provides excellent guest service by acknowledging guests promptly and taking their orders accurately. Prepares and processes the guest’s orders promptly and finalizes their purchase in a friendly manner.
  • Displays excellent problems solving skills and prides themselves on finding the best resolution that exemplifies the “Lee’s Way- doing what’s best for our team, our guests, and our company”.
Product Handling
  • Receiving and storing deli ingredients and supplies properly (cold and dry storage).
  • Washing, cutting, and portioning meats, cheeses, vegetables, and other ingredients.
  • Mixing and preparing deli salads, side dishes, sandwiches, and ready-to-eat meals.
  • Packaging products using wraps, containers, and labeling equipment.
  • Labeling and dating all prepared items according to company and food safety standards.
  • Stocking deli cases with finished products, ensuring freshness and rotation (FIFO).
  • Monitoring product quality and removing outdated or unsellable items.
  • Following proper sanitation practices when handling food, equipment, and utensils.
  • Maintaining separation of raw and ready-to-eat foods to prevent cross-contamination.
Cleanliness and Safety
  • Maintain a clean and organized work area.
  • Follow all safety and sanitation procedures.
  • Report any safety hazards or equipment issues to management.
  • Adhere to all food safety and sanitation regulations.
  • Contributes towards the cleaning responsibilities in the department as management sees fit.
Cash Handling (if applicable)
  • Operate cash registers and handle transactions accurately.
  • Follow store policies on returns, exchanges, and refunds.
  • Ensure the security of cash and other financial transactions.
Team Collaboration
  • Work cooperatively with team members to achieve store goals.
