The Culinary Internship at The Library Restaurant in Portsmouth, New Hampshire is a structured 12-month back-of-house training program designed to develop professional cooking, kitchen management, and leadership skills through seven progressive phases Interns begin by learning U.S. fine-dining standards, sanitation, and inventory systems, then advance through hands-on experience in pantry, sauté, oven, and butchering stations. Throughout the year, they participate in menu development, pricing analysis, and food cost management using systems like Xtra Chef and Toast.
As their skills grow, they take on greater responsibilities such as leading inventory counts, coordinating with front-of-house staff, and managing menu projects for seasonal updates and special events. The final phase focuses on leadership-overseeing menu rollouts, conducting training, and presenting a capstone menu project to the executive chef and general manager. This immersive internship combines technical cooking instruction with real-world kitchen operations and management, preparing participants for professional culinary careers in fine dining.
A trainee must be a foreign national who:
Has a degree or professional certificate from a foreign post-secondary academic institution and at least one year of prior related work experience in his or her occupational field outside the United States; or
Has five years of work experience outside the United States in the occupational field in which they are seeking training
Must be able to lift 20 pounds
ourly rate: $20 US per hour
Meals:
One meal per shift
Transportation: $1000 towards airfare
Housing provided: $100/week (utilities and WIFI included)
