Summary:

The Butcher is responsible for performing daily tasks that align with the department’s long‑term goals and objectives.

• Perform designated opening and closing duties of the butcher shop
• Keep walk‑ins clean and organized
• Receive products, store and rotate all products properly
• Maintain a clean work area in the butcher shop and all other operating areas of kitchens
• Prep, prepare, and execute all menu items to specification of the Chef
• Follow all sanitation principles and procedures

• Degree in Culinary Arts preferred
• Two years’ experience in Culinary at a Luxury Resort
• One year experience as a butcher

Constant standing and walking throughout shift. Occasional environmental exposures to cold, heat, and water. The individual must be able to transport up to 50 pounds on occasion and up to 35 pounds regularly.
