About the job

Based at Mandarin Oriental Punta Negra, Mallorca, as the Chef de Partie you will be responsible for overseeing a specific section of the kitchen, ensuring that all dishes are prepared to the highest standard and in line with the restaurant’s quality and efficiency. This position involves managing the preparation, cooking, and presentation of food, as well as ensuring cleanliness and adherence to food safety regulations.

Responsibilities
  • Prepare, cook, and present dishes within your designated section.
  • Supervise and train junior kitchen staff to ensure high standards are maintained.
  • Ensure cleanliness and hygiene standards are upheld in your section of the kitchen.
  • Manage food stock levels, assist in ordering and minimize waste.
  • Ensure consistency in the presentation and quality of food, adhering to restaurant specifications.
  • Collaborate with the Head Chef and Sous Chef to develop new menu items.
  • Ensure compliance with health and safety regulations, including food safety standards.
  • Assist in the development of daily specials and seasonal menus.
  • Work as part of a team, maintaining communication with other chefs and kitchen staff.
  • Handle all kitchen equipment safely and maintain it in good working condition.
  • Assist in the planning of menus and preparation of ingredients.
Experience and education
  • At least 2-3 years of experience working in a similar role within a high-volume, quality kitchen.
  • Experience in managing a specific section (e.g., grill, pastry, saucier) and training junior staff.
  • Culinary degree or equivalent professional qualification is preferred.
  • Additional food safety certifications (e.g., HACCP, food hygiene) are an advantage.
Technical Skills
  • Proficiency in various cooking techniques, including grilling, sautéing, roasting, and baking.
  • Strong knowledge of kitchen equipment and its proper use and maintenance.
  • Ability to read and follow recipes and ensure consistency in food preparation.
  • Strong knife skills and ability to prepare ingredients efficiently.
  • Good understanding of food safety and hygiene regulations.
  • Knowledge of inventory management and minimizing food waste.
  • Ability to handle multiple tasks simultaneously in a fast‑paced environment.
