The Junior Sous Chef supports the Banquet Chef and Restaurant Chef in delivering exceptional, luxury-driven culinary experiences across high-volume banquet operations and a la carte restaurant service. The Junior Sous Chef plays a key role in ensuring consistency, quality, and memorable guest experiences while operating at scale.
Responsibilities- Culinary Operations & Luxury Execution
- Support daily culinary operations for large-scale banquets, events, and restaurant service while maintaining luxury presentation and consistency.
- Execute menus with precision, refinement, and attention to detail, ensuring each dish reflects Fairmont brand standards.
- Assist with menu execution, prep planning, and service flow for high-volume operations without compromising quality.
- Uphold the philosophy that every guest interaction and plate served contributes to a memorable, elevated experience.

- Maintain strict adherence to food safety, sanitation, and health regulations.
- Ensure proper food handling, storage, labeling, and temperature control aligned with Fairmont standards.
- Take pride in maintaining clean, organized, and efficient work spaces reflective of a luxury environment.
- Planning, Sustainability & Responsibility
- Assist with ordering, receiving, and inventory control with a focus on cost awareness and waste reduction.
- Support sustainable kitchen practices aligned with Fairmont’s environmental commitments.
- Execute production schedules and prep lists based on forecasted business levels and event requirements.
- Communicate clearly and professionally with Banquet and Restaurant leadership to ensure seamless operations.
- Other duties as assigned
- Minimum 5 years of professional culinary experience in large-volume banquet and restaurant operations.
- Demonstrated experience working in luxury or upscale hospitality environments.
- Proven ability to lead teams in high-pressure, high-volume service periods.
- Strong understanding of food safety regulations, quality assurance, and operational standards.
- Strong culinary foundations with refined execution.
- High-volume banquet and restaurant service expertise.
