Overview
Food Service Manager – Working in the Campbell County KY Detention Center
A correctional food service manager is responsible for overseeing all aspects of food service operations within a correctional facility, ensuring efficient and safe food production and service for inmates and staff. This role combines food service management expertise with an understanding of the unique environment of a correctional facility, including security protocols, and working with an incarcerated population.
Responsibilities- Food Production and Service:
Supervising the preparation, cooking, and serving of meals, ensuring they meet nutritional standards and dietary requirements, including therapeutic and religious diets. - Staff and Inmate Management:
Training, supervising, and scheduling food service staff and inmates assigned to the kitchen, enforcing work rules, and maintaining discipline. - Inventory Management:
Monitoring food and supply levels, placing orders, and ensuring proper storage and rotation to minimize waste. - Sanitation and Safety:
Enforcing strict sanitation and safety procedures, maintaining a clean and hygienic kitchen environment, and ensuring compliance with health regulations. - Security and Custody:
Adhering to security protocols, preventing contraband, and managing inmate behavior within the food service area. - Menu Planning:
Developing menus that meet dietary guidelines and nutritional needs, considering cost and resource availability. - Emergency Response:
Responding to emergencies, such as foodborne illnesses or security incidents, and taking appropriate action.
- Experience in food service management, preferably in a high-security or institutional setting.
- Understanding of safety, sanitation, and health regulations applicable to a correctional facility.
- Ability to supervise staff and inmates, manage inventory, and plan menus within budget constraints.
