COMPENSATION: $26.00 per hour

Line Cooks (Steamers) are responsible for steaming dumplings for the guests, as well as helping the dumpling team by preparing, assembling, and closing the dumplings. They open and close the steamer stations, restock, and organize dumplings to be steamed throughout the shift. Line Cooks may work from a show kitchen and must maintain a clean, groomed, and professional appearance.

• Roll the dumpling/bun skin
• Stuff the dumplings/buns
• Close and arrange the dumplings/buns in the steamer properly
• Add necessary meat and allergen identifiers
• Steam the dumplings/buns for the appropriate amount of time
• Clean the dumpling room and the steamer station
• Label all items in accordance with Health Department regulations and Din Tai Fung procedures
• Attend monthly staff meetings and Dumpling meetings

• Keep all kitchen areas clean and sanitized
• Organize items within the walk‑in coolers and freezers
• Lift/move boxes, bags, chairs, and tables (up to 50 pounds)
• Assist with regular deep cleaning of the kitchen
• Maintain confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOPs”).
