The Heirloom Restaurant is our flagship restaurant, featuring formal dining and lakeside comfort in the dining room of the historic Athenaeum Hotel. The culinary experience is managed by the Executive Chef. During the nine‑week summer season the Heirloom Restaurant is open every day, serving breakfast, lunch, and dinner. During the pre‑season (May) and post‑season (September) the restaurant is open Thursday to Sunday for lunch and dinner.

About Your CompensationCompensation for this position starts at $22/hour and, with demonstrated experience and qualifications, candidates may earn up to $28/hour.
About Your Work Day- Assist with the development and promotion of a complete set of service standards and staff training processes ensuring that delivery is consistent
- Knowledge of seasonal staffing challenges
- Assist with operations of the hotel’s dining room, beverage & bar service, and direction of service staff, communication with chefs and kitchen staff, and execution of food and beverage service delivery
- Ensure proper setup of the dining room while maintaining a presentable dining atmosphere for guests
- Maintain a strong presence in the dining room during service periods and be available to guests, ensuring excellence in guest satisfaction
- Understand availability of seating and importance of organization and assignment of seating for the dining areas
- Monitor service bar and assist with cash bars pre/post season while understanding NYS liquor law and hotel policies regarding those laws
- Assist servers with order entry into the POS system
- Maintain high levels of sanitation and cleanliness through proper food handling practices
- Understand how the hotel’s dining services support other internal and external departments and the Chautauqua experience
- Collaborate with entire management team regarding consistent progressive coaching procedures
- Promote the Athenaeum’s significance as a historic property
- All other duties as assigned
The Chautauqua Institution’s Referral Bonus Program offers a $500 referral bonus (less taxes) for active employees who refer a new candidate who is hired and remains employed for at least 90 days from the first physical date of work. For seasonal positions working less than six months, the new candidate must remain employed for at least 30 days from the first physical date of work and until the closing date of the season, which is the last Sunday in August.
AboutYour Schedule
Seasons run from June to August with flexible full‑ and part‑time schedules, typically evenings, weekends, and holidays. Shifts are usually eight hours, with start times ranging between 5 am and 5 pm. Final schedules will be confirmed with management at the time of interview and offer of employment.
About Living On The GroundsThe Institution may provide limited housing options or assist with nearby housing arrangements for select opportunities, but housing is not a standard benefit for this position and may incur costs for the employee.
