Seafood Cutter 1 (Food Services) Position Summary

As a leader in wholesale, retail, and residential food distribution, Baldor Specialty Foods continues to grow and evolve across all departments. We are seeking experienced Seafood Cutters to join our operations team. Seafood Cutters are responsible for processing whole fish and raw seafood into high‑quality fillets, portions, and finished products that meet customer specifications. This role requires expert knife skills, attention to detail, and the ability to work efficiently in a fast‑paced, refrigerated production environment while maintaining Baldor's standards for quality, safety, and consistency.

Essential Duties & Responsibilities
  • Cut, fillet, portion, and fabricate a variety of seafood products to customer specifications.
  • Process whole fish into finished goods within required yield and weight variances.
  • Inspect products to ensure quality, freshness, and proper handling standards.
  • Accurately identify, distinguish, and organize multiple species of seafood.
  • Safely handle and maintain knives and other sharp tools.
  • Sharpen, hone, and care for knives and equipment as required.
  • Maintain a clean, organized, and sanitary workstation at all times.
  • Work collaboratively with team members and demonstrate leadership through skill and reliability.
Qualifications
  • Minimum 3+ years of recent professional fish cutting or seafood processing experience.
  • Proven expertise in knife handling, fish fabrication, and portion control.
  • Ability to work 8+ hour shifts, up to 6 days per week, in a refrigerated and wet environment.
  • Ability to perform repetitive tasks for extended periods.
  • Ability to regularly lift, carry, and move up to 50 lbs.
  • Requires frequent use of hands, arms, legs, and back for repetitive motions.
  • Strong understanding of seafood quality, freshness, and safe handling practices.
  • Reliable, punctual, and consistent attendance required.
Work Environment
  • Refrigerated production facility.
  • Fast‑paced, physically demanding role.
  • Standing, lifting, cutting, and repetitive motion throughout the shift.
