Position: Beverage Manager HiStory Hospitality Slough Up to £55,000
Location: New York

HiStory Hospitality are seeking an exceptional Beverage Manager to lead and elevate the beverage operation across a five-star country house hotel environment.

This senior role oversees multiple outlets within the estate, including a fine-dining restaurant, a lounge bar, private dining, banqueting and events, and in-room dining. You will be responsible for setting the strategic direction of all beverage programmes while ensuring flawless execution across a luxury, multi-outlet operation.

Working closely with the senior hotel leadership team and culinary leadership, you will deliver best-in-class beverage experiences that align with Michelin-level dining and five-star service standards.

The Role
  • Overall leadership of the hotel’s beverage strategy across all outlets
  • Development and curation of wine lists, spirits selections, cocktails and non-alcoholic offerings
  • Oversight of fine-dining beverage service, lounge bar operations, events and private dining
  • Management, training and development of bar teams and beverage leaders
  • Full financial accountability including GP, stock control, purchasing and supplier relationships
  • Champion consistency, service excellence, compliance and responsible service standards
  • Drive innovation while maintaining the highest levels of operational control
About You
  • Proven Beverage Manager / Head of Bars experience in a five-star hotel, luxury resort or Michelin / 3+ Rosette environment
  • Strong knowledge of wine, spirits, cocktails and premium beverage trends
  • Confident leader with experience managing multiple outlets and large teams
  • Commercially astute with a strong understanding of margins and cost control
  • Highly organised, detail-driven and operationally strong
  • Warm, professional and guest-focused with a passion for hospitality
Tom Sellers

Hailing from Nottingham, Tom Sellers is a two Michelin-starred Chef who opened his first restaurant, Restaurant Story,  launch, Tom’s unique approach garnered significant critical acclaim, being awarded a Michelin Star just five months after opening, with a second star following in 2021. Tom learned his craft from some of the world’s most influential Chefs and spent time working alongside the likes of Tom Aikens in London, Thomas Keller at three Michelin-starred per se in New York, and René Redzepi at two Michelin-starred Noma in Copenhagen, all before the age of 21.

Story Cellar, a Parisian inspired rotisserie style restaurant opened in 2023 to much critical acclaim followed by Dovetale at 1 Hotel Mayfair, where the restaurant offers a sustainably minded, produce led à la carte menu of reimagined European classics, bolstered by dishes cooked over the grill, and an abundant raw bar.
