Cook II - Job Summary
The Cook II is a mid-level culinary position responsible for independently managing assigned stations with consistency and quality. This role executes prep, production, and service across multiple areas, including line cooking and banquets, while maintaining food safety and presentation standards. The Cook II assists in training Cook III team members and supports the overall flow of the kitchen during high-volume service.
This position requires strong technical skills, efficiency, and adaptability.
Responsibilities
Cook II (Mid-Level / Independent):
- Competent line cook who can run a station unsupervised, with consistent quality.
- Read and interpret BEOs (Banquet Event Orders) and production sheets.
- Set up and stock stations with all necessary supplies.
- Prepare and cook menu items in accordance with recipes and quality standards.
- Maintain a clean and organized workstation, adhering to food safety standards and sanitation regulations.
- Collaborate with kitchen team members to ensure timely and efficient service.
- Monitor food inventory and communicate shortages or discrepancies to the appropriate personnel.
- Follow proper portion control and presentation techniques.
- Assist in the development of new menu items and specials.
Core Skills & Knowledge
- Proficiency in multiple stations (Garde Manger, sauté, grill, banquets, breakfast).
- Solid knife skills and ability to execute mise en place efficiently.
- Demonstrates consistency in portioning, presentation, and timing.
- Knowledge of safe food handling;
