Assistant Dietary Manager

Position FocusThe primary purpose of this position is to assist in managing dietary operations through accurate clinical documentation, including nutrition assessments, progress notes, MDS dietary completion, and plan‑of‑care documentation for all residents.

- Assist with oversight and management of the dietary process through accurate clinical documentation
- Document resident nutrition goals and approaches
- Collaborate with the consultant dietitian to develop menus, therapeutic modifications, recipes, and assessments for residents at nutritional risk
- Enter admission notes within 48 hours, documenting diet orders and facility capacity to meet them
- Begin admission assessments and identify resident problems with consultant RD; set goals and address MDS requirements
- Attend care‑plan and nutrition‑at‑risk meetings; follow up on recommendations from the consultant RD
- Ensure compliance with state/federal regulations and facility policies
- Prepare and serve residents’ daily meals; maintain kitchen area when time permits
- Prepare quality food products according to standardized recipes and menus
- Suggest menu changes and alternate items to utilize leftovers and supplies
- Test and smell food to determine quality and palatability
- Ensure proper preparation, portioning, and serving of foods according to standardized recipes
- Maintain and record assigned temperatures daily
- Direct and supervise dietary aides as appropriate
- Ensure food is ready at the specified time and begin meal service on time
- Follow temperature regulations in preparing, serving, and storing foods
- Use and clean institutional equipment; replenish supplies as necessary
- Participate in tray set‑up and delivery of meals; attend and participate in in‑service educational classes, department meetings, and all staff in‑services
- Maintain confidentiality of all residents and protect resident rights and privacy at all times
- Report and document resident or visitor incidents, accidents, complaints, or allegations using the designated occurrence reporting system
- Comply with safety requirements, infection control measures, and maintain a clean work environment per facility policy
- Perform other duties as assigned by the Administrator or consultant dietitian
- Understanding of dietary procedures and practices
- Interpersonal and managerial skills
- Ability to follow oral, written, and verbal instructions; function independently and make independent decisions when warranted
- Ability to read recipes and menus
- Organized and neat work habits
- Genuine interest in geriatric work and willingness to work for the best interest of residents and facility
- Personal integrity and ability to deal tactfully with residents, families, visitors, government agencies, and personnel
