Experience:

3-5 years in R&D of processed or packed foods, FMCG, B2B Ingredients, QSR, Ingredient, or D2C.

Meat Processed Product Experience Is Preferred.

Roles and Responsibilities

Lead end-to-end product development from concept to launch, including prototyping, sensory evaluation, shelf-life validation, scale-up, and documentation for regulatory compliance.
Collaborate with marketing, supply chain, operations, and sales to translate consumer insights into differentiated, on-trend D2C products and communicate innovation stories effectively.
Renovate existing product lines to improve taste, texture, nutrition, shelf-life, or cost efficiency while ensuring adherence to FSSAI and global food safety standards
Apply deep knowledge of functional ingredients and processing technologies (vacuum pack, pasteurisation, retort, IQF, hot-fill, MAP, etc.) to deliver optimal product performance and recommend suitable processes for product formats.
Partner with suppliers for ingredient trials, new technology assessment, and cost optimisation; collaborate with chefs and internal panels to balance culinary authenticity with processing practicality
Conduct sensory evaluations, build structured product feedback, and stay updated on global savory and protein trends, adapting them for Indian consumers.
Work with manufacturing partners/CMOs to troubleshoot and optimize plant trials and scale-up.

Skills

Strong hands-on formulation experience with functional ingredients (proteins, hydro colloids, stabilisers, fats/oils, seasonings, flavors), and good understanding of processing technologies (chilled, frozen, retort, shelf-stable) and packaging methods (MAP, vacuum, retort pouches, etc.).
Regulatory Knowledge:
Familiarity with food safety standards such as FSSAI, HACCP, GMP.
Proven ability to balance culinary sensibilities with technical/industrial feasibility, strong project management, problem-solving, and cross-functional communication skills.
Innovation-driven, consumer-focused, and motivated to scale D2C brands.
