Key Responsibilities- Plan regular and modified menus according to established guidelines
- Follow standardized recipes, portioning and presentation standards; complete and utilize daily production worksheets and waste logs; taste meals to ensure quality
- Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation per company and regulatory standards
- Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas; ensure adherence by staff
- Maintain inventory of food and non-food supplies within established guidelines; ensure necessary products are available when needed
- Make decisions regarding leftover food utilization within company guidelines
- Comply with federal, state, and local health and sanitation regulations; participate in audits
- Follow facility, department, and company safety policies; report occurrences
- Participate in departmental meetings, staff development, and professional programs as appropriate
- A.S. or equivalent experience
- 5+ years of progressive culinary/kitchen management experience, depending on formal degree or training
- Extensive catering experience is a plus
- High-volume, complex food service operations experience preferred
- Institutional and batch cooking experience
- Hands-on chef experience required
- Comprehensive knowledge of food and catering trends with focus on quality, production, sanitation, cost controls, and presentation
- Proficiency with computers (Word, Excel, PowerPoint, Outlook, Internet)
- Willingness to participate in client satisfaction programs
- Serv Safe certification is highly desirable
