The STOCK YARDS STORY
The STOCK YARDS STORY continues with a focus on providing chefs with expertly cut and portioned beef and pork for over 120 years, based on rigid meat-selection criteria, precise beef aging and expert trimming. Schedule
:
Monday - Friday 7:00 am - 3:30 pm

• Trim fat and skin from meat and customize portions of products using knives, or other meat production equipment.
• Count and stack on tray portions per customer and company specifications.
• Label portion with supplied number product labels.
• Set up cutting room as required.
• Keep cutting room and surrounding area clean and sanitized.
• Follow company GMP (Good Manufacturing Practices) to maintain sanitary conditions.
• Work standing continually in a refrigerated environment 35°F- 45°F.
• Other duties as assigned by Manager.

The incumbent is not required to provide direct supervision of any position.

Internal: The incumbent is required to interact with employees at all levels of responsibility throughout the company.

External: N/A

Work continually in refrigerated environment 35F- 45F degrees. Must be able to work for periods of time in freezer 10F to
-10F degrees.

Kitchen prep experience and some basic knife skills preferred; minimum of 6 months experience as a trimmer preferred. Experience with laser portion machinery or other meat production equipment preferred. 6 months in production, manufacturing or meat trimming experience required.

Knowledge of poultry, beef, lamb, and pork products. Knowledge of USDA grades and standards.

Compensation depends on relevant experience and/or education, specific skills, function, geographic location, and other factors as applicable by law. The expected base rate for this role is between $22.25 and $23.25 hr. As applicable, this role will also receive overtime compensation.
