The Dietary Manager is responsible for overseeing the planning, preparation, and service of meals to residents in accordance with nutritional guidelines, regulatory standards, and individual dietary needs. This role ensures a safe, sanitary, and customer‑focused food service operation within a long‑term care facility.
Key Responsibilities:- Menu Planning & Nutrition:
- Plan and develop menus in consultation with a registered dietitian to meet residents' nutritional needs and preferences.
- Ensure menus comply with local, state, and federal regulations, including dietary guidelines for older adults.
- Staff Supervision & Training:
- Hire, train, schedule, and supervise dietary staff including cooks, aides, and dishwashers.
- Monitor staff performance and provide feedback, coaching, and disciplinary action as needed.
- Meal Preparation & Service:
- Oversee the preparation and delivery of high‑quality meals that meet individual dietary restrictions (e.g., diabetic, low sodium, texture‑modified).
- Ensure timely and sanitary service of meals in dining areas and residents’ rooms.
- Sanitation & Safety:
- Maintain strict compliance with sanitation and infection control procedures in the kitchen and dining areas.
- Conduct routine inspections and ensure all kitchen equipment and food storage areas meet safety standards.
- Inventory & Budget Management:
- Order food, supplies, and equipment while staying within budget.
- Monitor inventory and reduce waste through proper storage and portion control.
- Regulatory Compliance:
- Ensure the dietary department meets all federal, state, and local regulations (e.g., CMS, state health department).
- Prepare for and participate in inspections and audits.
- Resident Relations:
- Communicate with residents and families regarding dietary concerns or preferences.
- Adjust menus or service practices in response to resident feedback.
- Certification as a Certified Dietary Manager (CDM) or equivalent (required or must be obtained within specified timeframe)
- High school diploma or GED (Associate’s or Bachelor’s degree in Nutrition, Dietetics, or related field preferred)
- Minimum of 2 years' experience in food service, with at least 1 year in a supervisory role (experience in long‑term care or healthcare setting preferred)
- Knowledge of dietary needs of elderly and special diets
- Strong leadership, communication, and organizational skills
- Serv Safe certification or food safety knowledge
Conditions:
- Full‑time position; may require weekends, holidays, and on‑call duties
- Physical demands include standing for long periods, lifting up to 50 lbs, and working in a kitchen environment
