Responsible for the overall cleanliness of kitchen areas and dishware, tableware, and service ware under the guidance of the Kitchen Supervisors.

• Cleans broilers, deep fryers, grills, ovens, range hoods, ware‑washing machines, floors, and walk‑ins.
• Rinses all dishware, tableware, and service ware for restaurants before sending them through the dish machine.
• Follows health and safety standards set by government agencies.
• Washes hands at each point of potential contamination.
• Clears kitchen floors with deck brushes and mops.
• Follows 3‑compartment sink procedures.
• Performs weekly de‑liming of each dish machine.
• Uses chemicals properly and knows where safety sheets are located.
• Reports any malfunctions of the dishwashing machine or other equipment.

• Sets up, breaks down, and maintains all dishwashers.
• Empties all trash and cardboard to dumpsters.
• Multitasks and communicates for safety and teamwork.
• Provides internal customer service to team members.
• Cleans and maintains all cook lines.
• Other duties as prescribed: cleaning ice machines, hand sinks, refilling paper towels and soap, cleaning floor signs, etc.
• Clean and change hood screen filters; familiar with hood & auto‑clean system.
• Check and refill auto‑clean system as necessary.
• Clean all shelving in coolers and storage areas; take apart and clean thoroughly.
• Pull out equipment; clean underneath and behind.
• Familiar with equipment operation, safe cleaning near hot surfaces and oils.
• Remove drawers from reach‑in cooler units and clean inside.
• Power wash and scrub floors weekly.

Exert up to 50 lb force occasionally, up to 20 lb frequently, and up to 10 lb constantly. Activities include reaching, standing, walking, pushing, pulling, and lifting.
