Pyro is a bold, 95‑cover restaurant in the heart of Borough from ex‑HIDE Head Chef Yiannis Mexis
. Showcasing refined Greek flavours, seasonal produce and a laid‑back taverna‑style energy, Pyro is all about food to linger over and service that feels like home. With a large outdoor terrace, open fire kitchen, and garden bar, we’re building a flagship team to help shape one of London’s most exciting new restaurants.

Role Overview

As a Sommelier
, you’ll be at the heart of our beverage program – guiding guests through our wine list, curating pairings, and sharing the stories behind each bottle with warmth and confidence, ensuring our drinks offering is as memorable as our food, while mentoring floor staff to build their own knowledge and confidence.

Key Responsibilities
  • Deliver an engaging and professional wine service across the restaurant & terrace.
  • Guide guests through the list with confidence, offering thoughtful pairings and recommendations.
  • Share the stories, regions, and inspiration behind the wines in an approachable way.
  • Support with stock management, cellar organisation, and daily ordering.
  • Train and support floor staff to raise beverage knowledge across the team.
  • Maintain close communication with the kitchen to ensure wine pairings complement the menu.
  • Handle guest feedback with professionalism, ensuring every guest leaves delighted.
  • Contribute to an upbeat, polished, and welcoming service culture.
What You’ll Bring
  • Previous experience as a Sommelier in a premium and high‑volume setting.
  • Strong wine knowledge, ideally with WSET Level 3 (or above) or equivalent experience.
  • Confidence in storytelling and guest engagement.
  • A genuine passion for hospitality and wine.
  • Excellent communication skills and a calm, professional presence under pressure.
  • A team‑first mindset, supporting both the beverage and floor teams.
