Duties

and responsibilities related to the Sous Chef - Banqueting role
  • Utilise your collaborative knowledge of the culinary department wherever possible, displaying initiative when problem solving.
  • Minimise waste to help ensure that the budget and sustainability measures are adhered to.
  • Knowledge of seasonal produce & new products on the market and awareness of culinary trends.
  • Ensure all dishes are correctly presented and garnished before being sent for service.
  • Mentor and coach colleagues to ensure maximum engagement and a smooth operation.
  • Ensure hygiene and sanitation guidelines are strictly adhered to, and that equipment and utensils are handled, maintained and used correctly.
  • To ensure that the department’s operational budget is strictly adhered to, that all costs are controlled, and expenditures are properly approved.
  • To maximise colleague productivity through the use of multi‑skilling, multi‑tasking and flexible scheduling in order to meet the financial goals of the Department as well as the expectations of all people we serve.
  • To prepare and ensure rotas are posted and timesheets submitted on time, making sure that they reflect business needs and other key performance indicators.
About You

Proven experience in luxury culinary operations, ideally within a hotel environment, demonstrating strong leadership and management skills to motivate and inspire a team. Possess extensive knowledge of food and beverage trends, industry best practices, and regulatory requirements.
