Responsibilities- Section Leadership:
Manage and oversee a specific kitchen section during night service, ensuring readiness, organisation, and excellence. - Menu Execution:
Prepare and present dishes to the highest standards, maintaining consistency in flavour, texture, and visual appeal across late‑night and early‑morning offerings. - Team Development:
Support and guide Night Demi Chefs and Commis Chefs, fostering a culture of learning and collaboration. - Inventory & Ordering:
Monitor stock levels, place orders, and ensure proper storage and rotation to minimise waste and maintain freshness. - Compliance & Hygiene:
Uphold rigorous food safety and hygiene standards in line with HACCP and company policies. - Operational Efficiency:
Maintain equipment and workstations, ensuring smooth overnight service and adherence to kitchen protocols. - Innovation & Creativity:
Contribute ideas to menu development, overnight specials, and guest experiences tailored to late‑night and early‑risers.
- Proven experience in hotel culinary operations, with the ability to manage and lead a section independently.
- Strong knowledge of food preparation techniques, kitchen operations, and HACCP compliance.
- Excellent communication and leadership skills to support and inspire junior team members.
- Ability to work independently and efficiently during overnight shifts in a fast‑paced, multi‑outlet environment.
- Previous experience in a Chef de Partie role within a luxury hotel or fine dining restaurant.
- Proven work experience or exposure to London‑based hotels, with knowledge of UK hospitality standards, local compliance, and service expectations for international guests.
- Level 2 or higher certification is preferred, with strict adherence to health and safety regulations.
