The Sushi Chef at Glory Roll Sushi is a highly visible, guest-facing culinary role responsible for executing an elevated sushi program while delivering a refined and engaging hospitality experience. This is a tipped position, reflecting the interactive nature of the sushi bar and the direct connection between culinary craftsmanship, service, and guest satisfaction.
As both a skilled culinary professional and a brand ambassador, the Sushi Chef sets the tone at the bar, upholds exceptional quality and presentation standards, and helps create a destination-worthy dining experience. In an intimate, high-touch environment, this role focuses on crafting high-quality, creative, and seasonally inspired sushi rolls, as well as expertly prepared sashimi.
This position requires precision, artistry, and a deep respect for traditional Japanese culinary techniques, while also embracing innovation and guest interaction. The Sushi Chef plays a vital role in maintaining the restaurant’s reputation for excellence and ensuring every guest enjoys an outstanding and memorable experience.
Core Responsibilities:Culinary Execution & Quality
- Execute sushi, sashimi, hand rolls, and specialty items with precision and consistency
- Maintain excellence in knife work, rice preparation, fish handling, and presentation
- Uphold Glory Roll’s culinary standards while contributing to seasonal features and specials
- Ensure all items meet standards for quality, appearance, and portion control
- Properly receive, inspect, and store seafood and specialty ingredients
- Maintain strict compliance with food safety, sanitation, and HACCP protocols
- Execute correct labeling, rotation, and temperature controls
- Keep the sushi bar and prep areas pristine and service‑ready at all times
- Engage guests seated at the sushi bar with confidence, warmth, and professionalism
- Educate guests on menu items, fish selection, and techniques when appropriate
- Maintain strong service pacing and awareness during peak periods
- Collaborate closely with the mixologist and FOH team to ensure seamless service
- Work in close partnership with the General Manager to support smooth daily operations
- Communicate prep needs, product levels, and quality concerns proactively
- Support training standards and best practices for sushi execution and bar setup
- Contribute to a culture of accountability, professionalism, and pride in craft
- 3–5+ years of professional sushi experience, preferably in a chef‑driven or high‑end environment
- Strong proficiency in traditional and modern sushi techniques
- Deep understanding of fish quality, sourcing, and handling
- Experience working in a guest-facing sushi bar environment preferred
- Excellent knife skills, attention to detail, and cleanliness standards
- Food Handler and Food Safety certifications (or ability to obtain)
- Hospitality-forward mindset with strong guest engagement skills
- Calm, focused presence during service
- Pride in consistency, execution, and teamwork
- Passion for sushi craft without ego
