Novelty Hill-Januik Winery is a full-service Tasting Room and Events venue located in Woodinville, WA. Under legendary Washington winemaker Mike Januik, the winery creates award-winning wines, produces world-class corporate and private events, including weddings, and hosts over 40,000 Tasting Room guests per year.

Summary:

We are in search of an Executive Chef to manage kitchen operations, execute private and Wine Club events, and advance our food program. The right person is a culinary artist with a talent for organization and detail, a deep passion for customer service, and a desire to always think bigger. This candidate is comfortable working with multiple departments and managing competing priorities and thrives in an ever-changing environment, while always keeping to the highest standards.

Duties

MENU PLANNING & PREPARATION
  • Development of seasonal menus for Tasting Room (tasting experiences), Breakfast, Lunch, Dinner, Weddings, and Special Events.
  • Follow regional, national and international food trends and update menus to stay at the forefront
  • Create competitive pricing for menus to achieve cost and sales goals
  • Work closely with Director of Events Sales to execute private events and weddings in accordance with event order and client expectations
  • Work closely with Tasting Room and Wine Club Managers to create and execute menus for private tastings, seasonal Winemaker Dinners, and assorted Wine Club events
  • Creation of unique, inspiring recipes for on-site food program and winery publications
  • Establish and maintain strict food quality control standards
  • Maintain strict quality control for food preparation and presentation
  • Create and adhere to sales and expenditure budgets
  • Manage all orders for food products and kitchen supplies
  • Manage food costs by efficiently controlling inventory and establishing specifications, product storage requirements and waste control procedures
  • Prepare and/or supervise the preparation of all menu items to winery standards
KITCHEN MANAGEMENT
  • Manage all aspects of kitchen operation
  • Organize and manage all catering within the winery facility
  • Ensure compliance with all regulations regarding food safety and health code regulations
  • Oversee staff of up to 5-6 employees
  • Ensure effective inventory control
  • Establish and maintain regular and thorough cleaning procedures and schedules for all kitchen areas, walk-in cooler/freezer and equipment
  • Oversee safe equipment operation and regular maintenance
  • Ensure compliance with all recycling rules and standards
  • Report any maintenance issues as soon as they occur
  • Organize and plan the kitchen herb garden
STAFF MANAGEMENT
  • Hire, train, supervise, and schedule a kitchen staff of 5-6 employees
  • Support General Manager with the training of service staff and tasting room employees
  • Support and direct Events staff during private and Wine Club events to ensure proper service
OTHER DUTIES
  • Participating in Wine Club and other special winery events as required
  • Performing other duties as directed
Qualifications
  • Culinary Certification
  • Minimum of 7 to 10 years related experience in fine dining or culinary arts in a supervisory position
  • Passion and knowledge about wine and basic winemaking principles
  • Ability to lift 55 pounds and work on feet for long periods of time
  • Must be available to work weekends, holidays, and evening events
  • Must be a motivating team player who can work efficiently in high volume situations
  • Manage multiple events in a day
  • Ability to feed up to 1,000+ people in a week and handle normal business needs, charcuterie boards, reserve tasting, pizzas
  • Must have a high level of organizational skills, attention to detail and understanding of leadership
  • Must hold a valid food handlers certification card and have HACCP knowledge
  • Must hold a valid driver's license with clean driving record
  • Ability to work 50+ hours per week, in accordance with business needs
Salary and Benefits

Salary Range: $80,000 - $90,000 annually
