Overview
The Department of Corrections, Division of Institutions, is recruiting for a Food Service Lead position at the Lemon Creek Correctional Center (LCCC) located in Juneau, Alaska.
What You Will Be DoingSupervise inmate workers in all aspects of the preparation and serving of approximately 650 meals per day, in a secure, efficient, and timely manner at Lemon Creek Correctional Center. Ensure the standard recipes are followed and each food item is portioned properly. Ensure that a variety of diets are properly prepared for each meal which includes, but is not limited to: regular, no pork, vegetarian, low cholesterol/low fat, diabetic, food allergy, finger food, and other diets as prescribed by the Medical Department.
Ensure that the highest possible standard of sanitation is maintained in all areas at all times.

Lemon Creek Correctional Center serves both as an intake and a long-term male facility. At any given time, 20% to 30% of the population is composed of inmates in pre-trial status.
