Role OverviewThe Chef de Cuisine will be responsible for creating and executing an authentic Persian menu while managing, training, and inspiring the kitchen brigade. This role is key to delivering an exceptional guest experience, ensuring consistency in quality, and maintaining effective food cost controls.
Key ResponsibilitiesContribute to the creation and execution of an authentic Iranian / Persian menu
Lead, manage, and train the kitchen brigade to ensure a motivated, well-organized team
Ensure consistency in the quality, taste, and presentation of all dishes at all times
Manage guest relations when required, particularly in the absence of the Executive Chef
Plan and manage kitchen rotas to meet business and operational needs
Support brand standards through ongoing staff training and performance assessment
Manage food cost controls to contribute to overall Food & Beverage revenue
Collaborate with other departments to ensure smooth daily operations
Ensure full compliance with food hygiene, health, and safety regulations
Extensive knowledge of Persian cuisine, with mastery of classic dishes such as kebabs, traditional stews (including Ghormeh Sabzi and Fesenjan), rice dishes (including Tahdig), traditional breads, and Persian desserts
Skilled in preparing authentic Persian flavors while maintaining high standards of consistency, presentation, and quality
Kitchen Leadership:
Proven ability to lead and manage a diverse kitchen team, including sous chefs, line cooks, and prep staff, fostering a collaborative and efficient work environment
Menu Development:
Experience designing seasonal or themed menus that balance culinary authenticity with customer preferences and contemporary dining trends
Training & Mentorship:
Strong commitment to developing junior chefs by teaching Persian cooking techniques, kitchen best practices, and high standards of food excellence
Cost & Inventory Management:
Solid understanding of food cost control, inventory management, supplier relationships, and sourcing specialty Persian ingredients
