Line Cooks (Steamers) are responsible for steaming dumplings and supporting the dumpling team with preparing, assembling, and closing dumplings. They open and close steamer stations, restock and organize dumplings, and maintain a clean, groomed, and professional appearance in the show kitchen.
Job Responsibilities & Tasks- Roll the dumpling/bun skin
- Stuff the dumplings/buns
- Close and arrange the dumplings/buns in the steamer properly
- Add necessary meat and allergen identifiers
- Steam the dumplings/buns for the appropriate amount of time
- Clean the dumpling room and the steamer station
- Label all items in accordance with Health Department regulations and Din Tai Fung procedures
- Attend monthly staff meetings and Dumpling meetings
- Keep all kitchen areas clean and sanitized
- Organize items within the walk‑in coolers and freezers
- Lift/move boxes, bags, chairs, and tables (up to 50 pounds)
- Assist with regular deep cleaning of the kitchen /li>
- Maintain confidentiality regarding all proprietary information, including recipes and standard operating procedures (SOPs)
