R&D Manager – Patisserie Brand Portfolio

Lead research and development for our Patisserie Brand portfolio: create commercially viable recipes, optimize processes for consistent quality at scale, reduce cost per unit, and support marketing/product launches.

• Product development & innovation:
  Create and validate new cake concepts (flavor, texture, appearance) and run sensory trials to align with market trends and brand positioning.
• Process scale‑up & industrialization:
  Convert bench recipes to production formulas; run plant trials; optimize mixing, proofing, baking, and packaging parameters to ensure reproducible results at volume.
• Quality, shelf‑life & food safety:
  Design and oversee shelf‑life, microbial and stability testing; ensure compliance with local food regulations and internal QA standards (HACCP/GMP).
• Cross‑functional collaboration:
  Work with Production, QA, Procurement, Marketing, and Sales to coordinate launches, ingredient sourcing, and packaging claims.
• Team & supplier management:
  Lead R&D chefs/technicians; evaluate and qualify ingredient suppliers and co‑packers.
• Documentation & cost control:
  Maintain recipe files, SOPs, trial reports, and manage R&D budget and cost‑reduction initiatives.

• Bachelor’s or Master’s in Food Science, Food Technology, Bakery Science, or related field.
• Experience 5–10 years in bakery R&D with demonstrable cake formulation and scale‑up experience;
  prior retail/industrial bakery exposure preferred.
