Role Description
  • Develop and prepare fresh cocktail ingredients including syrups, shrubs, cordials, bitters, infusions, garnishes, and purées.
  • Create seasonal flavor profiles that complement menus across the business and align with overall food and beverage concepts.
  • Work closely with bartenders to translate culinary techniques into drink friendly formats. Ensure consistency and quality across all bar preparations.
  • Prepare bar ingredients daily or weekly based on volume and seasonality.
  • Be hands on and present in daily operations, supporting the team on the floor and behind the bar while ensuring effective scheduling.
  • Maintain clear labelling, dating, and storage standards.
  • Manage inventory of bar prep items and coordinate ordering with kitchen and bar teams.
  • Collaborate closely with the wider Food and Beverage team, assisting where needed to support the guest experience.
  • Work with the Deputy General Manager to regularly review beverage sales, margins, and targets.
  • Complete training to become part of the hotel duty management team.
  • Quality and presentation Oversee garnish standards, including cutting, dehydration, pickling, and preservation.
  • Ensure all bar ingredients meet food safety and hygiene standards.
  • Maintain a clean, organized prep area in line with health regulations.
  • Lead by example, fostering a positive and supportive environment that encourages high standards and team personality.
  • Take ownership of Health and Safety across all bar areas.
  • Train bartenders on the use, handling, and storage of house made ingredients.
  • Support menu rollouts by preparing recipes and spec sheets.
  • Collaborate with chefs, bartenders, and event teams on special menus, activations, and events.
  • Build strong relationships with suppliers and internal teams.
  • Host regular training sessions with Front of House teams.
Qualifications
  • Minimum of 2 years' experience in a similar position as a Head Bartender in a luxury Restaurant environment
  • Certification in wine preferred
  • Previous experience in cashiering/order taking and food service, culinary and guest relations training preferred
  • An extensive background managing the beverage section within a hotel or Luxury restaurant setting
  • Extensive knowledge of wine pairing & fine dining service required
  • Experience with POS Systems and inventory control is an asset
