The Cluster Director of Purchasing is the strategic and operational lead for procurement, inventory, and logistics across a multi‑property portfolio in the Eastern Caribbean. With a strong commercial mindset and a deep understanding of regional supply ecosystems, this leader is responsible for building a resilient, cost‑efficient, and seasonally aligned supply chain.
The role involves forward‑looking sourcing from local farmers and fisheries, managing customs and tax processes, recommending optimal storage and stock handling practices, and supporting culinary, engineering, and operational departments in making smart, timely material decisions.
Key Responsibilities1. Strategic Sourcing & Local Integration
- Identify and cultivate relationships with local farmers, fishers, producers, and regional cooperatives, aligning supply availability with operational forecasts.
- Engage in contract farming agreements or future purchasing models to secure long‑term produce supply based on seasonal harvests and forecasted F&B demand.
- Establish direct trade agreements that minimize middlemen, improve quality control, and enhance sustainability.
- Maintain an updated calendar of regional harvests, seafood seasons, and export availability, and share it regularly with culinary and purchasing teams.
- Lead all international and regional import operations, ensuring compliance with customs procedures in Dominica and Grenada.
- Optimize usage of CARICOM tax waivers, the Common External Tariff (CET), and tourism‑related exemptions for cost‑effective procurement.
- Maintain proactive relations with customs officers, shipping agents, and relevant government entities to ensure timely clearances and minimize penalties or delays.
3. Purchasing Planning & Menu Support
- Work closely with Executive Chefs to align menus with seasonal availability, optimizing use of fresh, local, or regional ingredients while controlling costs.
- Recommend product substitutions or innovations based on price fluctuations, product cycles, and supplier reliability.
- Create a rolling 3‑ to 6‑month procurement forecast for major food categories, cleaning supplies, FF&E, OS&E, and engineering consumables.
4. Inventory, Warehousing & Stock Optimization
- Oversee centralized or property‑specific storerooms, ensuring proper stock rotation (FIFO/FEFO), space management, temperature control, and labeling.
- Recommend upgrades or adjustments to storage infrastructure (e.g., cold rooms, dry storage expansion, racking systems) based on forecasted volume and seasonal bulk buys.
- Develop and maintain par stock levels by department, with weekly, monthly, and quarterly review checkpoints.
- Implement a robust stocktaking process and ensure stock variances are investigated, documented, and corrected.
