We are seeking a talented and dedicated Chef to join our culinary team and provide strong support to our Executive Chef in running the culinary operations department.

About the Role
Assists the Executive Chef in managing kitchen operations, including menu planning, food preparation, and inventory management.
Collaborates with the Executive Chef in producing diversified menus.
Plans the food design and executes culinary creations.
Oversees and trains the culinary team to ensure that they adhere to the highest standards of food safety and hygiene.
Ensures the residence HACCP program’s day-to-day compliance requirements are met.
Actively participates in the management and implementation of the Food Safety Program.
Manages stocks and storage according to relevant regulations
Supports the Head Chef in cost and inventory control measures to minimise food wastage and spoilage.
Key Responsibilities
1. Food Preparation and Cooking:
Assist the Executive Chef in planning and executing the preparation and cooking of meals according to established recipes, portion sizes, and quality standards.
Take a hands-on approach in supervising and participating in food preparation, cooking, and plating activities.
2. Menu Support and Development:
Collaborate with the Executive Chef in menu planning, incorporating a variety of nutritious and appealing dishes that align with the dietary needs and preferences of aged care clients.
3. Kitchen Operations Management:
Assist in managing and organising daily kitchen operations, including inventory control, procurement, and equipment maintenance.
4. Team Leadership and Training:
Support the Executive Chef in supervising, training, and mentoring kitchen staff, including chefs, cooks, kitchen assistants and dining room service staff.
Delegate tasks effectively and provide clear instructions to ensure smooth kitchen operations during the absence of the Executive Chef.
5. Quality Control and Presentation:
Ensure that all meals are plated and garnished attractively, considering both visual appeal and ease of consumption for aged care clients.
Collaborate with the dining service team to ensure that meals are served promptly and in accordance with clients' preferences.
6. Safety and Hygiene Compliance:
Adhere to strict food safety and hygiene regulations, maintaining a clean and organised kitchen environment.

Desired Skill & Experience
Proven experience as a Chef (aged care experience preferred)
Commercial cookery background or Hospitality Industry Qualification desirable.
Previous experience in the design and implementation of nutritionally adequate and appropriate menus specific to Aged Care.
Familiarity with food safety regulations and best practices.
Culinary skills with the ability to prepare and present diverse menus.
Proven budget and cost management experience.
High level of QA, WH&S, HACCP and Food Safety knowledge.
Excellent team management abilities.
Effective organisational and time management skills.
Ability to thrive in a fast-paced, team-oriented environment.
Up-to-date vaccination as required by legislation or industry best practice from time to time.
