voco Grand Central Hotel’s Champagne Central bar is looking for an Assistant Bar Manager (Full-Time) to join us in creating a warm voco welcome for our guests. Pull up a seat and step back in time. Our Champagne bar overlooks Central Station and evokes the golden age of travel, with a sash of style and lashings of charm. For those feeling peckish, food is fine, flavoursome, and focuses on small plates and sharing boards.

Afternoon tea has a special place on the menu and is – of course – best taken with a glass of Champagne. Awarded the Best Bar None Gold Award at the 2025 Best Bar None awards.

As Assistant Bar Manager at the iconic Champagne Central bar, your main duties and responsibilities will be:

• Support the management of a team of around 25-35 team members (including 3 team leaders) — training and developing our team members to provide voco standards of service.
• Work closely with other outlets F&B managers within the wider Hotel to ensure a consistent approach across the Hotel.
• Support with budgeting, forecasting, P&L, and working with the wider Hotel goals and processes.
• Manage a high-volume city-centre bar environment, with very high numbers of covers during evenings and weekends.

• Availability to work 40 hours per week across 5 shifts (evening and weekend availability essential).
• F&B or Bar Supervisory/Management experience for a minimum of 1 year (experience in supporting within a large operation and driving engagement in a large team is essential).
• Experience in training team members, confident in implementing training plans and following correct processes to recruit new team members.
• Knowledge of stocktaking and gross profit (G.P) to support the Champagne Bar Manager.
• Extensive knowledge of spirits, wines, beers, and cocktails (enthusiastic about leading by example with our creative cocktails).
• A bonus if you have worked within a similar hotel structure, understanding wider operations within the business.
• Creativity, with involvement in creating and updating our menus in line with current drinks trends.
• High standards of food quality, cleanliness, and customer satisfaction.
• Ability to monitor service flow and improve efficiency during peak hours, manage open-table reservations and table plans.
• Basic computer and POS system skills.
• Assist manager in hiring.
• Overall, readiness to work in our voco team and provide our guests with a warm Glasgow welcome.
