Position Summary
All foods listed on the respective menu/s in an assigned kitchen outlet/s are executed with proper quality, consistency, and adherence to HRCNIN standards. The incumbent demonstrates advanced cooking procedures, presentation skills, butchering, grilling, sauce production, wok and dim‑sum techniques, pastry and bread production (including dessert and cake decoration, advanced baking, recipe creation, and quality control).
Responsibilities- Creates an atmosphere that induces guests to choose Hard Rock Casino Northern Indiana for gaming entertainment; actively builds and retains guest relations and mentors team members to provide superior service.
- Cut and trim meat from larger wholesale portions into steaks, chops, roasts, and other cuts.
- Apply knowledge of dry‑aging meat per HRCNIN standards.
- Prepare all foods in accordance with company standards and recipes; ensure plates are aesthetically appealing and cooked to specification.
- Demonstrate good knowledge and knife skills.
- Utilize all equipment provided by HRCNIN with advanced proficiency (wood/coal grills, electric or gas grills/flat tops, woks, steamers, dry‑age room production, pastry equipment).
- Produce a variety of dishes/prep based on HRCNIN standards for various cuisines.
- Maintain a neat and clean workstation.
- Assist co‑workers for efficient kitchen operation.
- Ensure cleanliness, report safety issues, and handle hazardous areas and accidents.
- Store foods properly, including leftovers from prior functions.
- Maintain fully stocked items and working equipment.
- Close workstations properly.
- Assist with duties at special events or parties, such as carving, cooking, setup, teardown, and other assigned tasks.
- Attend and participate in meetings, completing follow‑up as assigned.
- Assist other cooks during cooking and assembly processes.
- Clean up before shift ends.
- Sanitize all work areas according to Food Safety rules and HRCNIN standards.
- Perform work regularly and predictably.
- Clean and sanitize work and public spaces.
- Occasionally perform duties for special events or parties.
- Other duties as assigned.
- Attend seminars when needed.
Education and Experience Requirements: This role typically requires a high school diploma or equivalent. A culinary apprenticeship, associate degree from a culinary institution, or equivalent with industry experience is preferred. Consistent high‑level performance as a Specialty Cook is expected.
- Must obtain and maintain all licenses/certifications per Federal, State, and Indiana Gaming Commission.
- Must pass a background check.
- Must pass a drug screening.
- Must be at least twenty‑one (21) years of age.
- Must be able to work holidays and weekends, and flexible shifts.
- Food, food product, food preparation, etc.
- Standard safety and sanitation practices for food and beverage service.
- Preparation of stocks, soups, mother sauces, and all varieties of meat including veal, pork, beef, lamb, poultry, game, and seafood.
- Present an image of excitement, enthusiasm, and an outgoing personality while projecting a professional appearance.
- Communicate clearly and concisely, both orally and in writing.
- Be flexible to work varying shifts and schedules as needed.
- Act professionally in a constantly changing internal and external environment.
- Use all tools associated with the position in all outlets.
- Review and comprehend recipes and other necessary documentation.
- Inspect the quality of all food items.
- Operate all meat production equipment such as grinder, patty machine, etc.
