Summary of position:
Prepares all food items according to standardized recipes. Ensures lines are set and fully stocked with fresh ingredients for each shift. Completes daily side duties in a timely manner, and in quantities appropriate for business volume.
Wage: $20.00 - $21.00 an hour.
Responsibilities- Ensures preparation of all food items for the grill/broiler, sauté, fry and pantry stations.
- Wash and clean vegetables.
- Marinade chicken, soup stock and other items.
- Chop, grind, slice, bone and cut meats.
- Prepare fish and shellfish to specified recipes.
- Mix and blend spices as needed.
- Operate stations:
Sauté, Grill/Broiler, Deep Fryer, Pantry. - Prepare all sauces required according to the recipe.
- Be able to perform the 6 basic knife cuts, including Allumette, Large Dice, Medium Dice, Small Dice, Batonnet, and Julienne.
- Perform knife skills tasks within the allotted time; dice onions and slice vegetables to specified sizes and speeds.
- Prepare the daily special item and adjust as needed.
- Minimize re-cooking of items e.g., steaks, fish; ensure orders are served in a timely manner.
- Check stock in all stations; consult with Chef on Duty for items needed.
- Set up line with all food items, plates, bowls, sauces and coordinate orders.
- Assist in breaking down leftovers, labeling and storage.
- Clean and maintain stations, refrigerators and freezers; follow daily cleaning schedule.
- Adhere to safety and sanitation codes, policies and procedures.
- Demonstrate extensive knowledge of cooking various cuisines; capable of working multiple stations and cross training within one year of hire date.
- Perform all other duties as assigned by Food and Beverage Management.
- Minimum 5 years’ line experience in a high-volume restaurant and/or casino kitchen, or equivalent combination of experience, education and/or training.
- Education/Formal Training:
High School or equivalent. - Reasoning Ability:
Ability to determine and shift priorities quickly; solve practical problems and deal with a variety of variables. - Language
Skills:
Excellent oral and written communication; strong interpersonal skills; able to read and speak English. - Certifications, Licenses, Registrations:
Gardena City Work permit;
California Food Handler Card;
Serv Safe Certified or able to pass within first 9 months. - Physical Demands:
Ability to lift at least 20 lbs; long periods of standing/walking; occasional climbing, balancing, stooping, kneeling or crouching.
