- Monitor USDA-FSIS regulatory activities and plant compliance with regulatory standards.
- Act as liaison between USDA-FSIS and plant operations.
- This position requires use of knife to incise lymph nodes and make other cuts as necessary to prepare carcasses/parts for USDA-FSIS inspection.
- This position requires frequent interaction and communication with USDA-FSIS inspectors.
- Must be legally authorized to work in the United States
- Must be 18 years of age
- Ability to read, write, and communicate in English as required for safety, training, and regulatory compliance
- Knowledge of safe food handling, workplace safety practices, and safe use of tools (e.g., knives, hooks), or the ability to acquire such knowledge through training
Ability to perform basic mathematical tasks, including reading and comparing weights and measurements; performing addition, subtraction, multiplication, and division; and coordinating lot numbers with orders - Ability to perform the essential functions of the role, which may include standing for extended periods, lifting or moving up to 50 pounds, working in a hot and humid environment, and using production tools, with or without reasonable accommodation
- Effective verbal communication skills, including the ability to interact professionally with USDA FSIS inspectors and internal team members to support regulatory compliance
- Previous beef or meat processing experience, including knife skills
- Bi-lingual communication skills in English and Spanish
- Ability to learn and apply technical procedures, policies and regulatory requirements
- Prior experience working with USDA-FSIS inspectors or regulatory/compliance teams
