We are looking for an experienced Operations Head Baker to lead our artisan bakery operations s is a hybrid leadership role for a hands‑on master baker who also excels in production planning, cost control, and team management.
The ideal candidate treats baking as both a science and an art, with a passion for precision, innovation, and consistently exceptional quality.
Role OverviewAs Operations Head Baker, you will oversee end‑to‑end bakery operations, ensuring the highest standards of artisan bread and viennoiserie while optimizing production workflows, food cost, and team performance.
Key Responsibilities 1. Technical Leadership & Quality Control- Lead production of sourdough breads (long fermentation), baguettes, brioches, and premium viennoiserie (croissants).
- Ensure consistency across all products in texture, crumb structure, flavor, and visual appeal, aligned with the Bakerist signature.
- Drive R&D by developing new recipes and seasonal collections.
- Refine existing formulas (bases, doughs, creams) for quality, stability, and scalability.
- Plan and manage daily and weekly production schedules to meet demand while minimizing waste.
- Oversee inventory, supplier relationships, and stock control of ingredients.
- Monitor and improve food cost and labor cost without compromising quality.
- Develop, implement, and maintain clear Standard Operating Procedures (SOPs).
- Train, mentor, and upskill a multicultural bakery team (Commis, CDP, Sous Chef).
- Manage staff scheduling, KPIs, productivity, and team morale.
- Ensure full compliance with HACCP standards and Dubai Municipality food safety regulations.
- Experience:
Minimum 5 years in high‑end artisan bakeries, including 2–3 years in a Head Baker or Sous Chef role. - Technical Expertise:
Strong knowledge of baker’s percentages, hydration, sourdough microbiology, and lamination techniques. - Management
Skills:
Proven ability in team leadership production planning, food cost control, and yield management. - Language:
Fluent English is required. - Technical Proficiency:
Comfortable with computers; proficient in Excel or Google Sheets; familiar with inventory systems; strong sense of social media‑ready product presentation.
- Precision‑oriented with strong attention to detail, measurements, and temperatures.
- Creative, with the ability to develop standout hero products.
- Adaptable and motivated to thrive in Dubai’s fast‑paced and competitive F&B environment.
