The Role
- Assists in the supervising Stewardingreport line, facilities, operation and costs.
- Search, understand and process Kitchen & Outlet manager’s feedback, raise corrective solution if necessary.
- Maintain all ecological directives from the company and owners.
- Educate Colleagues about environmental best practices.
- Adhere to HACCP, Dubai’smunicipality, Kerzner Food Safety and Security regulation
- Take ownership ofthe dispatch,inventory, order andfollow up of kitchen and restaurant OE.
- Is responsible for the right manning at each station on daily operation, jump on the line during the peak period to support the Team and the Operation needs.
- Is responsible for the good functioning of the dish washing station, chemical dispensing station, ensuring the right amount of chemical is used.
- Establishes and maintains effective employee relations.
- Perform annual performance appraisal for subordinates
- Lecture and correct poor behaviours
- Conduct trainings to the team, is preparing schedule, attendance records and monitory performance thereafter.
- If maintain all records updated and filed in the right location at alltime.
- Assists in all administrative work required, including, attendance records, duty roster, health inspection records and checklists
- Ensures cleanliness of kitchen and kitchen equipment’s are well maintained according to Thestandards.
- Initiates repair and maintenance orders as appropriate.
- Performs related duties and special projects as assigned.
- Ensure that all staff havethe proper tools and training to perform day-to-day operations.
- Communicate each shift with Stewarding Supervisors and managers..
- Responsible for achieving financial goals by monitoring cost without compromise in hygienic condition.
- To achieve departmental goals and objectives.
- Be aware of hotel’s fire evacuation and emergency policies and procedure
- Knowledge on first aid, safety and security procedures affecting the food and beverage department.
- Identifies and solves problems in a timely manner.
- Prepare all Chemical requests for the stewarding department.
- Control and keep record of all breakages
- Actively carry out duties that involve frequent lifting and carrying equipment up to 30 lbs.
- To ensure a positive & professional working environment throughout the kitchen
- Maintaining and owning a positive mood throughout the Team.
- Any other duties as assigned by Culinary Director himself or through
Culinaryleadership.
- Previous stewarding experience of 5years in a supervisory or management position
- Great attention to detail, problem solving skills and a team player.
- Mandatory knowledge of MS Office and Kitchen management system.
- Able to work in a busy environment.
- Is HACCP certified Level 2 minimum.
- Can lift up 30kg loads, can push and pull heavy trolleys.
- A solid understanding of business acumen and demonstrate effective communication skills (verbal and written).
- Ability to manage large, multicultural teams.
